Chickpea Salad

This is a recipe rerun because I made it this morning and forgot how yummy it is. It tastes all fresh and summery. Thanks to momma for the recipe.


Chickpea Salad with Herbs

2 (15-0z) cans chickpeas/garbanzo beans, drained & rinsed
1 tbsp red wine vinegar
1 tbsp balsamic vinegar
1 tbsp olive oil
1/ 4 tsp salt
1/ 4 tsp pepper
2 cloves garlic, minced
1 tbsp fresh oregano, minced
1 tbsp fresh thyme, minced

1/ 2 cup red onion, thinly sliced OR 1 bunch green onions sliced

1 Roma tomato diced

Combine all ingredients. Let sit at room temperature for 1 hour before serving.

I prefer it with green onions rather than red. I leave out the tomato because I don’t like tomatoes.  And I use whatever fresh herbs I have on hand – today it was basil, oregano, and parsley.

    Oh man, this is my go-to lunch only different.
    1 can of chickpeas drained and slightly rinsed
    a big handful of cilantro
    juice of 1/2ish a lemon
    grapeseed oil (I’m allergic to olive oil, it sucks I know)
    garlic minced if I’m feeling up to it.

    Serve at any temperature, but I like it best the second day out of the fridge.

    Ok, I love every ingredient listed (even roma tomatoes!) so I have to give this a big ol YUM! Would go great with a nice crusty bread!

    Hi Michelle, I really enjoy reading your blog.
    With regard to Tessa and eating.
    Of my three children, one was a great eater, one was OK and one really didn’t hit solids until she was 15 months or so (her choice), and they all grew up to nice healthy adults, who don’t live on high fat high carb take aways! I must admit their food was what we had for meals, but mashed, pureed, to suit. So long as Tessa is making her milestones, gaining enough weight, don’t get too hung up on what she doesn’t or does eat. Offer her whatever the meal is, but making an issue will only lead to heart ache, and that is mainly yours!
