I tried one of the sugar free cheesecake recipes I found on line. It wasn’t bad but it wasn’t cheesecake. It basically tastes like vanilla pudding with a hint of cream cheese. So the quest continues. (A couple of you have shared recipes…thank you!)  The better sounding recipes require a springform pan and I’ve never been a big baker so I’ve never seen the need to own one. I will try another recipe soon and see if I can’t find one that is decent. Melissa also pointed out that the Cheesecake Factory has a sugar free version. I checked out the menu on line and she is correct. I might just have to send Steve over there to pick up a piece if this yen doesn’t subside.

Since I’ve had to give up my beloved Guatemalan coffee, I’ve been trying some different decaf teas. I have to say, I never thought Chai would be my thing because I’m not really into the warm spices but it isn’t half bad.

    You’re going to send Steve for a piece of cheesecake? What are you crazy? You need to send Steve for a cheesecake…the whole thing…not a piece! Or, you could go online and order one to be sent to your very own door…they do that!

    OOO! The protein power book has a recipe in their recipes section for “low carb” (aka sugar free) mini cheesecakes. You make them in a mini muffin tin and use artificial sweetener. I’m a big fan.

    Ok, this recipe is going to seem crazy, but trust me that it works! I made it with key lime juice this summer on a whim for a barbecue we were having and everyone loved it! I would personally top it with cherry pie filling, but not sure how low carb/sugar that would be ; ).

    crust:

    2 c macadamia nuts
    1/2 c dates
    1/4 c dried coconut

    filling:

    3 c cashews, soaked in H2O for 1 hour, then drained
    3/4 c lemon juice
    1/2 c agave syrup or honey (to taste) (you don’t need much!)
    3/4 c coconut oil (Melted till liquid, but not boiling)
    1 tsp vanilla
    1/2 tsp sea salt (optional)

    Crust: In food processor blend nuts and dates. Sprinkle dried coconut on bottom of pan. Press mixture into pan.

    Filling: Blend all filling ingredients plus 1/2 c H2O. Pour mixture into crust. Place in freezer until firm for instant(er) gratification, otherwise let firm up in fridge. Top with some yummy fruit sauce, like frozen blueberries defrosted and blended into a sauce.

    So, no cheese, but still very tasty. Again, this was served at a barbecue (of meat, not lettuce) and folks loved it!

    Just catching up on your blog. Congratulations and many, many best wishes. After two miscarriages, I too had a roller coaster pregnancy in which I was on bedrest. My son (the result of that roller coaster) is now six and a half and a little bedrest sounds divine. But I do remember the extreme isolation and boredom of bedrest. And TV sucked for me too – I ended up addicted to horrible soap operas. Many, many wishes and prayers for you. (When I was on bedrest I did not have a toddler – I can’t imagine trying to balance that)

    As for feeling guilty about your husband doing all the work – don’t. I felt guilty too – but the day we brought our son home, I was walking around (in pain) doing the laundry while he took a nap on the couch! Enjoy it while it lasts.

    That is some serious Sabrina cuteness! I forgot to tell you earlier, but I was on bedrest when I was pregnant with Hayden and Logan was around a year and a half old. My mom used to drive over 3 hours each way to stay with me during the week……Would you believe that when they FINALLY let me up at 37 weeks Hayden stubbornly stayed put for almost two more weeks?????? Logan and I did a lot of book reading and playing on the floor. I also got a portable high chair seat thingy, so I could let him get in himself. I would give him his meals and snacks there in the living room with me……I’m trying to think of more, but that’s been about 12 years ago………

    I heart chai tea. I have a super easy caffeine free version that I make during the holidays. If you’d like it, let me know. I can send you the recipe. I think I’ll go have some right now!

    And I am with everyone else-get the ENTIRE cheesecake! Not just a piece! Those cravings WILL strike again! 😉
