Almost sugar free cheese cake

Okay, I managed to concoct an almost sugar free cheese cake-ish thing that mostly satisfied my yen for cheese cake.  It still isn’t the real thing but big points for very little effort required.

1 8oz box 1/3 less fat cream cheese

1 1/3 cup milk

1 cap full lemon extract (optional – could use vanilla if you prefer)

1 box (4 serving size) sugar free cheesecake flavor instant pudding

1 ready made pie crust – graham cracker or other (I used a granola one)

Let the cream cheese sit out and soften.  Put it into a bowl and beat it until creamy.  Slowly add milk.  Add lemon extract and cheesecake pudding mix – mix until smooth.  Pour into pie crust and chill.  It is almost sugar free because the crust will have sugar in it.

    Sugar Free Cheesecake? Tell me again why you speak such crazy talk? Then again, of all my food vices, Cheesecake is not one of them. If I eat one slice a year, it’s a lot. So I don’t have a HUGE need for sugar free.

    I do commend you on not using your pregnancy as a license to eat like I did. I could not stop with the farking Quarter Pounders and the Reese’s PB Cups, and therefor I gained 80 pounds.

    I think Santa needs to bring you a springform pan for Christmas so you can REALLY make cheesecake. (A LITTLE sugar never hurt anyone…did it?)

    I came across your blog just now and it brought back memories of the baby years of my two adorable sons when they were just toddlers. I remember my wife at that time getting onto huge eating sprees and one of them was desserts and cheese cakes were on top of that list. As i can remember she was into alot of asian foods as well as into the fatty chips.

    Now that is nearly 20 years ago and thank you for bringing those sweet memories back again
