Sloppy Cubanos

I tried a new recipe last night from Rachel Ray’s magazine (love her, hate her – she has easy recipes that are pretty yummy). The Sloppy Cubanos are somewhat like sloppy joes but with ground pork and way yummier – lots of interesting flavors. You can find the recipe here. I couldn’t find chorizo at the 3 places I looked so I used a cajun sausage instead. I made the sandwiches with the dill pickles and swiss cheese as the recipe directed. I ended up pulling off my pickles – I felt like they overwhelmed the lovely spices of the meat. But Steve liked it with the pickles – so give it a try and see how you like it. .

Thought I would throw this one out there for those who have said they like the recipes. And for those who asked how I have time to cook, please know that a lot of nights dinner isn’t worthy of a photo and a recipe on my blog. But since I quit working, I feel like it is my job to clean the house and cook dinner (totally my own neurotic thing, not Steve’s opinion at all). I am not that great at the house cleaning part so I try to overachieve on the cooking aspect. But the only reason I have time to cook is because Steve is a wonderful and active dad. He comes home after work and basically takes over with Sabrina. He feeds her dinner, gives her a bath, and puts her to bed 95% of the time. While he is doing that, I cook us dinner. The result is that we eat quite late (usually around 8pm). When she is a bit older and we are eating as a family? I have no idea how I will pull that off.

    Sadly, I’m failing in both the cleaning and cooking realm…… I had high hopes of cleaning today. Yeah, didn’t happen. Cooking? Well, I had a crockpot lasagne planned and forgot!! How do you forget something like that??

    I too have a love/hate relationship with the Rach…. She annoys me, but she does come up with some tasty, quick meals. I will try the sloppy cubanos. I hold the pickles on mine anyway, so I’ll not even bother.

    sounds delish. Might have to try it. If you want chorizo let me know and next time I’m up in Seattle I’ll pick some up at Uli’s Famous Sausage and ship it down. That place is Emeril’s favorite sausage joint. So yummy.

    I make the time to cook. Partly because the boy helps me and otherwise is mostly independent. As Sabrina gets older you will find that cooking a good quick meal is not that difficult. Like everything else, you just have to make time.

    I actually purchased one of Rachael’s cookbooks. Pretty good. I like her pasta dishes best.
    Enjoyed Aardvark’s letters, but really enjoyed her friends bickering with each other in the comments.
    Maybe we should start doing that here? I could pick a fight with Alleen about if South Florida is really the South…(it’s NOT!) ;o)

    Sadly, the cookbook I use the most is Sopranos! Sometimes if one of us gets a craving, I’ll just look something up on foodnetwork.com or epicurious.com. I’ve even set the laptop up on Ducky’s highchair and cooked off that! I only do that for Pioneer Woman, because of all the delicious pictures for us noobs.

    Hi Michelle–hope you are adjusting OK to the new digs/town! PA is hot and humid right now, so don’t feel to bad. Just wanted to check in with you as well as tell you that Nate is 2 and a half and we still eat dinner after he goes to bed! I still haven’t figured out how to cook a full dinner while he is awake–the best we have done eating as a “family” (on weekdays at least) is take out pizza or leftovers! (or when we go out for ice cream and count that as dinner!) He is relatively well adjusted, so don’t sweat it! Sabrina is a doll–take care!

    Okay, Alleen. You do get points for NOT living in Palm Beach! (I call that Southern New York)
    But you really need to come up to the Panhandle to experience the real South in Florida. We’re right up here in LA – lower Alabama. Further bickering shall be confined to my own blog rather than Michelle’s. :o)

    Just got a cleaning lady… noticing that fresh socks were looking dirty before we left the house… no time to mop… because mopping takes all kinds of timing! Like making sure that everyone is asleep so you can get it done without a slip and a fall or someone trailing through it… and since I was not up to midnight mopping sessions… I got a cleaning lady! Dinner, I try… sometimes too hard… but I try!

    And LOVE the memo’s… I was just thinking of doing one yesterday… Memo to the Lawnmower man who mowed the same spot for 2 hours and woke up all my kids!!!!
